Homemade Summer Sausage

Another recipe from my collection in Mom’s handwriting. Do you think she added the fact about “shiny side out” because she knew I needed careful directions???

  • 4 pounds hamburger
  • 2 cups water
  • ¼ teaspoon liquid smoke
  • ½ teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons mustard seed
  • 5 tablespoons curing salt, Morton’s
  • 1. Mix together. Divide into 4-6 rolls.
    2. Wrap in foil (shiny side out) in fridge.
    3. Refrigerate 24 hours.
    4. Remove and punch holes in bottom of foil.
    5. Place on rack and bake 1 1/2 hours at 325 degrees.
