Refried Beans

  • 1 cup pinto beans, cleaned and soaked overnight
  • ¼ onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons shortening
  • salt
  • green onions, to garnish
  • cheddar cheese, to garnish
Soak beans overnight in hot water. Drain. Saute onion and garlic in oil. Add beans and cook 2-4 hours. Mash cooked beans. Fry in pan in shortening. Salt to taste. Garnish and serve.
