Cranberry Orange Nut Bread

Yield: 1 loaf

Ingredients:

1 1/4 cups cranberries, coarsely chopped
1 tablespoon orange peel, grated
2 tablespoons flour
3 cups flour, sifted
1 tablespoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 teaspoon allspice
1 1/4 cups sugar
2 large eggs, beaten
3/4 cup orange juice
1/2 cup water
1/4 cup dark molasses
1/2 cup nuts, chopped

Directions:

1. Combine cranberries, orange peel and sugar. Set aside.

2. Combine dry ingredients.

3. Mix beaten eggs with orange juice, water and molasses.

4. Add to flour mix.

5. Add cranberry mix and nuts.

6. Stir until dry ingredients are just blended.

7. Pour into greased and floured loaf pan.

8. Bake 80 minutes.
