1/4 pound bacon
1 egg
1 egg yolk
3/4 cup half and half
1/4 teaspoon salt
dry mustard
3/4 cup shredded swiss cheese
Individual tart shells
1/2 cup flour
1/8 teaspoon salt
3 tablespoons butter
1 tablespoon ice water


1. Prepare tart shells and refrigerate. Oven fry bacon (cut in pieces) until crisp. Beat egg and egg yolk in medium bowl. Blend in cream. Add spices. Blend well. Sprinkle bacon pieces over bottom of unbaked shells. Sprinkle cheese over bacon. Pour half of egg mixture in each shell. Place tart pans on preheated baking sheet. Bake 15 minutes at 350 degrees or until crust slightly browns. Reduce heat to 325 degrees and bake 15 more minutes or until inserted knife comes out clean.
