I made this cake gluten free for Suzanne. I just used a gluten free baking mix instead of gluten flour. Suzanne took a picture of it and so I used it here so this is what the recipe actually looks like!!!

  • 1 ¾ cups flour
  • ½ cup shortening
  • 1 cup sugar
  • 2 eggs
  • ½ cup dates or raisins
  • 1 ½ cups apple sauce
  • ½ cup nuts
  • 1 teaspoon cinnamon
  • ¼ teaspoon cloves
  • 1 teaspoon baking powder
  • ½ teaspoon soda
  • ¾ teaspoon salt
  • 1teaspoon vanilla 

    1. Cream shortening, add sugar and cream well.

    2. Add eggs and vanilla.
    3. Beat well.
    4. Chop or grind the dates or raisins and nuts.
    5. Use a portion of the measured flour to dredge the ground fruit and nuts.
    6. Add spices, soda, salt and baking powder to remaining flour.
    7. Add it alternately with the apple sauce.
    8. Fold in the floured fruit.
    9. Pour into greased pan and bake at 350 degrees for 40-45 minutes.
